The practice of bear paw
Chinese name:熊掌
Also known as Xiongjiao. Bear paws are the feet of black bears or brown bears, which are dried. Bear paws often have leather belts and are divided into front and back palms. The former is often small, about 15-20 cm long, with obvious palm flowers, many gums, wider palms, and more fragrant flesh, with no smell. The hind palm is longer, about 20~30 cm long, the palm flower is not obvious, the palm surface is narrow, the smell is slightly smelly, and the quality is not as good as the fore palm. Bear’s paw is mainly produced in Heilongjiang, Jilin, Yunnan, Sichuan and other places. Hunter I catch the strips in winter and spring, take off the soles of my feet after capturing, and dry them in the shade in a ventilated place. The best quality is the one that is wide, thick, dry, smelly and not smelly. Xiong Chang has always been regarded as a treasure, and often used as a rare delicacy at high-end banquets.
