The trotters tendons are the tendons that connect the joints, which are manually extracted and dried. Tendons consists of collagen protein with an elastic protein configuration. Collagen can be digested, but its nutritional value is far inferior to that of muscle tissue protein. The nutritional value is not high, but it is rich in gelatin and soft in texture, so it is often used as a raw material for banquet dishes in cooking.
