Classic Braised Pork Practice
Introduction of classic braised pork ingredients
Ingredients:
Pork (300 g) scallion (section 3-4) sugar (5-6 tablets) geraniol (1) star anise (a) ginger (a) soy sauce (q.s.) soy sauce (q.s.) wine (q.s.) Salt (appropriate amount) Chicken Essence (appropriate amount) Warm water (appropriate amount) Edible oil (appropriate amount) Red dried peppers (2-3 pcs)
The steps of classic braised pork:
1. Cut the pork belly into chunks of appropriate size.
2. Add clean water to the pot, cool the pork belly in a pot, remove the cold water after boiling, drain the water for later use.
3. Prepare other auxiliary materials.
4. Put an appropriate amount of oil in the pot and heat it to 50% heat, add the rock sugar and slowly melt it over a low fire.
5. Add the pork belly and stir fry to evenly hang the sugar color.
6. Add appropriate amount of soy sauce, dark soy sauce and cooking wine, stir fry until the pork belly is colored.
7. Put in shallots, ginger slices and red dried peppers.
8. Add water to the ingredients in the pot, add ginger slices and star anise, boil on high heat and simmer for 40-50 minutes on medium and low heat.
9. When the soup in the pot is reduced, add an appropriate amount of salt and chicken essence.
10. Stir-fry evenly to high heat to collect the juice.

Tips:
For pork, choose five-layered three-layered meat, and the braised pork will taste good.
When changing the sugar color, stir-fry with a spatula until the rock sugar melts, being careful not to mash.
